Mexican Fish Rub

This is a bold and flavoursome dry rub to be used with strongly-flavoured fish that incorporates many traditional Mexican elements in its construction. The quantity should be sufficient for four good-sized fish fillets.
Ingredients:
  • 2 tbsp Allspice Berries, coarsely ground
  • 2 tbsp Annatto Seeds, finely ground
  • 2 tbsp dried Oregano, finely ground
  • 1/2 tsp Sea Salt
  • 2 tsp Cumin Seeds, coarsely ground

Directions
Mix the spices well together (if whole grind in a pestle and mortar). Rub over strongly-flavoured fish such as mackerel fillets or tuna steaks then cook by frying in olive oil.
